The workshop “OIL – Production with Safety and Quality” was successfully held on 19/11/17 in Agios Konstantinos of Fthiotida, in collaboration with the Association of Professionals of Agios Konstantinos. The conclusions are several and substantial.
Olive oil is one of the main products of our country. The good practices that a producer will follow from the field to the production, storage and distribution of olive oil are the golden secrets that will give his product higher quality and at the same time added value. This value becomes even greater when the olive oil is standardised and distributed either within the country or to foreign countries. The extroversion and commercial potential of a company or a standardisation cooperative is enhanced by the adoption of a quality system, which creates greater prestige and confidence in potential partners. However, a producer must not forget his obligation to provide a product that is safe for the consuming public. The final inspection of olive oil should ensure that it has only the desired characteristics and is free of harmful substances.
In any case, the modern olive oil producer and packager, irrespective of his capacity, should regard the developments in science and technology as an ally for a safe, dynamic and competitive product.
